NuttZo Pancakes

 (whenever possible use organic and local ingredients)

Ingredients

  • 1 cup nonfat vanilla yogurt
  • 2T flax seed, finely ground
  • ¾ cup whole wheat flour
  • ½ tsp baking soda
  • 1 egg, beaten
  • 1 cup skim milk (more if you like thinner pancakes)
  • ¼ cup NuttZo

Directions:

In a large bowl, sift together the flour, flax seed, and baking soda. Make a well in the center and pour in yogurt, egg, and milk; mix until smooth. Heat (medium high) griddle and coat with cooking spray.

Pour or scoop batter onto the griddle, using approximately 2T for each pancake; brown on both sides.

Add 1/2T of NuttZo to each pancake and serve.

While enjoying, close your eyes and imagine you’re sitting at the table with your grandmother. Peaceful bliss!
